My husband currently cannot have nuts, dairy or tomatoes. That means I have to get these items either by eating different dinners than my husband or in my breakfast and lunch. I have been really struggling to come up with some new and different meals to make for dinner that will be delicious and hardy enough to fill up my husband and please me at the same time. I have eliminated a lot of dishes from our normal dinner regimend including but not limited to: pizza, pasta and casseroles. We have gone more towards simple meals - meat, potato and vegetable or Mexican without the cheese. I guess you could say we're eating quite healthy since we aren't loading our food up with heavy creams, cheeses or sauces. You could also say our dinners are boring.
This week's creative dinner menu looks like this:
Monday: Chicken sausage with peppers and onions, served on a hot, soft pretzel. Mustard on the side.
Tuesday: Shrimp Tacos. Black beans, sauteed shrimp, avocado, lettuce and hot sauce.
Wednesday: Salmon with homemade french fries, broccoli and toast with fake butter.

Thursday: Breakfast for Dinner. Scrambled Eggs and French Toast
Friday: Steak Bowls.
My shrimp tacos are actually really easy. I toss the shrimp with a mixture of chili powder, onion powder, garlic and salt and pepper before sauteeing on medium-high heat.

Warm up a medium tortilla and add black beans. I cooked mine with green chilies this time.
Add the shrimp
Add avocado and cilantro and shake some hot sauce on top. I LOVE that Valentina Picante sauce.
Top with a handful of lettuce, fold it over and enjoy.
His lunches are a struggle as well because he absolutely cannot eat out for fear of contamination. That means we have to pack the night before since he gets up about 8 seconds before he has to be out the door every morning. Currently, I am packing the following in his lunch:
2 clementines or 1 large orange
1 bag of chips
4 hard boiled eggs
3 Oreos
1 small container of hummus
1 small bag of pretzels to dip in the hummus
1 bag of fruit smilies (haha - Great Value brand)
1 bag of fruit smilies (haha - Great Value brand)
1 tupperware container of a chicken pasta salad or a chicken breast with dipping sauce and dairy-free bread.
This sounds like a lot of food but my husband is not a small man. The eggs are his second breakfast. He makes a smoothie of strawberries, blueberries and a banana for his drive to work. He works 10 hour days, so he needs a good amount of food to get him through the day. Sometimes I'll throw in a treat like a SuperPretzel or some leftovers from my dinner out the night before.
My meals, on the other hand, have been looking like this recently:
Breakfast: Pop-tarts or apples and cinnamon oatmeal. Sometimes both.
Lunches:
Monday: Salad, clementines, peanut butter sandwich, chips, 1 hard boiled egg and Christmas cookies.
Tuesday: Red Robin
Wednesday: Same as Monday
Thursday: Pho
Friday: Chicken nuggets, salad, clementines, chips, 1 hard boiled egg, peanut butter cups.
Sometimes I just can't stomach what I have in my lunch bag and feel the need to eat out. It's a really bad habit that needs to stop soon...not just because we're combining bank accounts next month, right dear? :)
3 weeks after the dietary restrictions went into place, Hops is still going strong, . On Christmas Eve, we're planning to go out to eat for the first time with some friends after church. We're hoping to find somewhere that Hops can eat safely. I've been researching restaurants in our area and not having a very good time. Even the allergy boards are not being very helpful. Their suggestion for dairy allergies is to just eat at home. Hopefully we find something where he can get an appetizer that is safe for just one night.

You are such a good wife to go to all these lengths to think up meals that he can eat! Everything sounds really good, although I know how easy it can be to get tired of eating the same things all the time. I really hope you're able to find a good restaurant to eat at for Christmas!
