Old Fashioned Chicken and Rice
Tortilla Casserole
Both meals were easy and quick to make. They also happened to use items I had in the house like canned black beans, tomatoes, chicken, rice and corn tortillas. All of these items are staples in my pantry/freezer so they're always a good bet when I want to make a big dish. I separated each meal into 6 tupperware containers. This will give Hops something to take to work with him for lunch and something for us to eat for dinner if we need something quick. I will freeze 4 of the meals for future eating when we need something quick for dinner.
I also threw a pork tenderloin in the crockpot. This recipe I got off of the website Pinterest. I have started to see some serious success from other bloggers and recipes they have pinned on Pinterest, so I decided to go ahead and try one I had found. I did a search for crock pot pork and came up with this one: Balsamic glazed pork tenderloin. It was originally pinned from Shugary Sweets blog.
I shredded the tenderloin and put it into a large air-tight tupperware container so I could freeze it. Sincethis weekend is our anniversary, I don't want to cook on Sunday. This will give us something to pull out of the freezer Sunday night to enjoy for lunches next week! I haven't made the glaze yet but the pork came out tasting fantastic. I'll make the glaze either Sunday night or Monday morning before work. Yum!
I just talked to my friend Christy last night and she and I made plans to have a cooking day in early November. We are probably going to use the same book I used for the two recipes above and maybe we'll do some crockpot meals while we're at it, as well. I'll be sure to come back and let you know what we made and how the meals came out when we're done!
