I threw the zucchini into the oven at 350 for 15 minutes to cook them a bit and soften them up. Once they were somewhat tender, I cut out the insides, leaving about 1/2" around the edges for the boat. I then cut down the middle and sliced lengthwise, without cutting through the bottom. I scooped out the meat of the zucchini and then used a spoon to "clean out" the zucchini to allow more room for filling.
I took the zucchini pieces and chopped them up into small bites. I added those to a bowl with 1/3 cup of red sauce and mini meatballs I had made with the sauce. Add some salt and pepper and you're ready to top the bowls with the filling. I filled the zucchini bowls and topped that with a blend of parmesan and mozzarella. I baked them at 375 for 15 minutes. They were a nice dinner, they did get some funny looks from Hops. Too much investment in the vegetable on this one? Well, he was in luck. Not only were there mini meatballs, but I had put spicy sausage in the red sauce, as well. That made up for the fact that the filling was sitting in a vegetable.
Oh and while I was making these, I got a warning from Thumper that our friends were back. Unfortunately this time, they were definitely eating our bushes. I sort of care....OK, I know I should care...but...I mean....look at the BABIES!!!

I KNOW! I had to murder this one with Photoshop to get the deer to show up. In my haste to take pictures, I forgot to check my white balance. It was set to indoor lighting. No, it doesn't look all that great now, but at least you can see the baby. She (he?) was totally looking over at me like her Mom was. This was too cute to just throw away. Look at those ears!
I accidentally bumped my lens against the door and they were quickly off to the woods again. Sigh. I'm sorry babies, I didn't mean to scare you off. I could have stared at you all day.
